I missed s’mores all summer. Microwave versions are convenient, but they don’t compare to the ritual of toasting a marshmallow over a flame. Since I don’t camp or build bonfires, my oven became the best alternative for getting that toasted marshmallow flavor.

I’ve avoided the broiler for a while—there’s something nerve-wracking about watching the oven char food—but I finally used it for photos and a couple of s’mores afterward. With the balcony door open, oven mitts on, and a timer set, I managed to char marshmallows without incident. That success made me more comfortable using the broiler again.

If you prefer to avoid the broiler entirely, you can bake the marshmallows inside a giant cookie instead, like this Peanut Butter S’mores Chocolate Chip Skillet Cookie. This skillet cookie has true s’mores flavor: graham cracker crumbs folded into the dough, mini marshmallows scattered throughout, and plenty of chocolate chips.

I considered chopping a few Hershey bars into the dough, but ended up using the bars for actual s’mores and ran out—no regrets. I also added peanut butter because peanut butter, chocolate, and toasted marshmallows are a match made in dessert heaven.
