Ingredients
- 1 lb lean ground beef
- 1 small onion, chopped
- 1/2 tsp garlic powder
- 2 TBS dry taco seasoning
- 1/2 cup salsa
- 15 oz canned black soybeans, drained and rinsed (optional)
- 2 medium zucchini, sliced or shredded
- salt and pepper, to taste
- shredded cheese, sour cream, sliced avocado or other toppings of choice

Heat a skillet over medium heat. Add the lean ground beef and cook about 5 minutes, breaking it into small pieces and stirring frequently until no longer pink. Add the chopped onion and garlic powder, then continue to cook and stir for about 2 minutes, until the onion softens.

Stir in the salsa, taco seasoning, and black soybeans if using. Add the zucchini, season with salt and pepper, and cook for about 5 minutes, stirring frequently, until the zucchini is crisp-tender. Remove the pan from the heat and sprinkle shredded cheese over the top. Let stand for 2 minutes to melt the cheese. Serve portions and finish with sour cream, avocado, or other preferred toppings.
