The other night Eric and I settled in with bowls of ice cream to watch Netflix. I actually stopped eating before I finished mine — and for a brief moment I felt proud of myself for not overeating. That feeling lasted about five minutes, until I got up and stepped right onto the ice cream I had left on the floor. Lesson learned: don’t leave your dessert where it can be sacrificed to a bare foot.
I find that eating a few lighter, healthy things makes indulgences like ice cream feel more sustainable. It’s all about balance and priorities.
These endive bites are perfect: just four ingredients and they come together in minutes. They work as an afternoon snack, a simple holiday appetizer, or a game-day palate cleanser to cut through all the cheesy, carb-dense offerings. Sometimes it’s nice to have something fresh and crunchy between bites of richer snacks.

Have you tried Belgian endive (pronounced on-deev)? I’d only had it in restaurants until recently. Eric even made a late-night grocery run to find it; he came back with the very last head on the shelf. It’s small, crisp, slightly bitter, and pairs beautifully with creamy cheese and sweet-spicy jelly.

If you can’t find Belgian endive, ask the produce department — or substitute small romaine hearts, radicchio, cucumber slices, or celery for a similar crunchy vessel.

And don’t skip the smokehouse almonds — they add a bold, crunchy finish. I could easily snack my way through a whole can of them.
Smokey Almond Cream Cheese Endive Bites

Ingredients
- 1 head Belgian endive
- 4-5 tablespoons cream cheese, softened
- 4-5 tablespoons red pepper jelly
- 1/3 cup smokehouse almonds, chopped
Instructions

Trim the base of the endive and separate the leaves.

Spread a small amount of cream cheese on each leaf.

Top the cream cheese with a spoonful of red pepper jelly.

Sprinkle with chopped smokehouse almonds and serve.

These are great to assemble a few hours ahead. Refrigerate or leave at room temperature, but add the almonds just before serving so they stay crunchy.
