Cherry Popsicles with 3 Ingredients: Homemade Summer Treat

During the hot summer months my kids love homemade popsicles. I avoid food dye whenever possible, so I don’t buy store-bought popsicles. We use fresh or frozen fruit on hand; lately I’ve had an abundance of frozen cherries from a local orchard. These cherry popsicles are one of my favorites because a splash of lemon gives them a cherry-lemonade flavor, and they require only three main ingredients.

Fresh cherry popsicles with a hint of lemon—just like cherry lemonade. Use honey or agave instead of sugar for a lighter-sweet option.

Ingredients

  

  • 3 cups fresh or frozen cherries pitted
  • 1 tablespoon lemon juice *see note
  • 1/4 cup sugar or honey

Instructions

 

  • Place pitted fresh or frozen cherries into a blender. Add the sweetener and lemon juice. Blend until smooth, adding water a little at a time if needed to help the mixture blend (with frozen cherries I used up to 1 cup of water). The texture should be thick but still pourable.
  • Pour the cherry mixture into popsicle molds. Insert sticks so they stay centered. Freeze for 4–8 hours or overnight for best results.
  • To remove popsicles, briefly run warm water over the outside bottom of the molds until they loosen, then gently pull them free. Serve and enjoy.

Notes

Some recipes use lime juice instead of lemon. I used bottled lemon juice since that’s what I had, but freshly squeezed lemon or lime will brighten the flavor even more.

You can substitute natural sweeteners to taste. Honey and agave work well; use less or more depending on your preference. Stevia, monk fruit, coconut sugar, or blended dates are other alternatives if you want to experiment.

Step 1: Place all ingredients into a blender. Blend while adding water as needed until the cherries break down. The mixture should be thick but pourable.

Step 2: Pour the cherry mixture into popsicle molds. Fit sticks on top and freeze at least 4 hours, preferably 8 or overnight.

Why only 7 popsicles?

The recipe yields enough for seven popsicles rather than eight. You could add a bit more water or cherries to stretch it to eight, but I prefer the original balance of cherries, sweetener, and lemon.

Step 3: Run warm water over the bottom of the popsicle molds to loosen the popsicles, then remove and enjoy.

These popsicles are perfect for kids to enjoy outside and give me a little quiet time during busy summer days. If I had the time, I’d relax by the pool with one of these and a good book—maybe with a bowl of butter ranch pretzels to snack on.

Best cherry pitting hack

My mother-in-law taught me to pit cherries with a hairpin instead of cutting them in half. It’s quick and keeps the cherries whole. I haven’t invested in a cherry pitter yet, and this method has worked well—just sanitize the hairpin before use.

Alternative sweeteners I recommend:

Honey works well but will add its own flavor. Agave, stevia, and monk fruit are good low-glycemic options. Coconut sugar or blended dates add different notes if you don’t mind extra flavor. You can also skip sweetener entirely if you prefer the natural tart-sweetness of cherries.
