Step 1: Make the spicy mayo sauce

Prepare the spicy mayo first so it’s ready when the shrimp come off the grill. Combining the sauce ahead of time keeps the cooking process smooth and lets the flavors meld.

In a mixing bowl, combine mayonnaise, a splash of pickle juice, hot sauce to taste, stone-ground mustard, prepared horseradish, lime zest and juice, and a pinch of your favorite taco seasoning. Whisk until smooth and taste—add more hot sauce if you want extra heat, but increase gradually so it doesn’t overpower the sauce.

Step 2: Season and grill the shrimp

This recipe works with fresh or thawed frozen shrimp. If using frozen shrimp, thaw them completely before seasoning. Remove the shells, pat the shrimp dry, then drizzle with olive oil and toss with taco-style seasoning until evenly coated.

Preheat your grill or griddle to high heat. A hot surface will sear the shrimp quickly and create a nice crust. If using a flat top, a little fat or cooking spray helps develop color.

Shrimp on the grill

Place the shrimp on the hot grill and cook about 2 minutes per side, just until opaque and lightly charred. Avoid overcooking—shrimp cook very quickly. Remove them from the heat, drizzle with the spicy mayo, and serve right away.

Frequently Asked Questions:

Can I make this in the oven or stove top?

Yes. You can cook these shrimp on a stovetop in a skillet or finish them under a broiler in the oven. A hot pan or broiler will give similar results—just watch the shrimp closely and cook until they are opaque and firm.
