Credit to Mr Millas for the original concept and photography—I’ve recreated this version at home and it consistently delights. Creamy, slightly caramelized, and crowned with vibrant Picota cherries, this cheesecake elevates simple ingredients into a memorable dessert.

Picota cherries are the jewel of Spain’s Jerte Valley: heart-shaped, intensely sweet and firm. Their flavor complements the rich, custardy interior and caramelized top of the Basque cheesecake, producing a balance of sweetness and bright acidity that keeps each bite interesting.

Serve this cheesecake at gatherings or quiet dinners—its rustic appearance and luxurious texture make it both an impressive centerpiece and a comforting treat.

Ingredients

For the Basque Cheesecake:

  • 600g cream cheese, room temperature

  • 200g caster sugar

  • 4 large eggs

  • 300ml heavy cream

  • 30g plain flour

  • 1 tsp vanilla extract

  • Pinch of sea salt

For the Picota Cherry Topping:

  • 300g fresh Picota cherries, pitted

  • 80g sugar

  • 2 tbsp water

  • 1 tbsp lemon juice

  • 1 tsp cornstarch mixed with 1 tbsp water

Preparation

Step 1: Prepare the Cheesecake Base

Preheat the oven to 220°C. Line a 23cm springform pan with parchment paper, letting it overhang the sides to create a high collar. In a large bowl, beat the cream cheese until smooth and lump-free. Gradually add the caster sugar and continue beating until fully incorporated. Add the eggs one at a time, mixing gently after each addition. Fold in the heavy cream, plain flour, vanilla extract and a pinch of sea salt just until combined—avoid overmixing to keep the texture dense and creamy.

Step 2: Bake to Perfection

Pour the batter into the prepared pan, smoothing the top lightly. Bake for 45–50 minutes until the surface is deeply golden and slightly jiggly in the center. The signature of a Basque cheesecake is its caramelized, almost burnt top—this is intentional and adds depth of flavor. Remove from the oven and let cool on a wire rack. Chill in the refrigerator for at least 4 hours, or overnight, to set properly.

Step 3: Make the Cherry Compote

While the cheesecake cools, prepare the Picota cherry topping. Combine pitted cherries, sugar, water and lemon juice in a small saucepan. Cook over medium heat for 8–10 minutes until the cherries soften and release their juices. Stir in the cornstarch slurry and cook for another 1–2 minutes until the mixture thickens. Remove from heat and allow the compote to cool completely before spooning over the chilled cheesecake.

Why This Basque Cheesecake Works

Basque cheesecake, or tarta de queso, stands apart because it has no crust and gains its signature texture from high-heat baking. The exterior caramelizes deeply while the interior remains lusciously creamy and slightly custardy. This contrast—caramelized top and silky center—is what gives the dessert its wide appeal.

The Picota Cherry Advantage

Picota cherries bring bright, concentrated sweetness and a firm bite that complements the rich cheesecake. If true Picota cherries are not available, choose the firmest, sweetest cherries you can find to achieve a similar balance of flavor and texture.

Tips for Best Results

  • Bring ingredients to room temperature: This ensures a smooth batter and even baking.

  • Don’t overmix: Mixing gently preserves the dense, creamy texture.

  • Embrace the caramelization: A darker top adds depth—avoid scraping or whitening it.

  • Chill fully before topping: Allow the cheesecake to set in the fridge so the compote doesn’t run.
