Ingredients

  • 4 ounces dairy-free cream cheese we love Violife for nut-free and creamy!
  • 1 teaspoon peppermint extract
  • 1 1/2 cups dairy-free white chocolate Enjoy Life Foods mini chips recommended
  • 3 crushed candy canes organic, red dye-free recommended

Instructions

  • Place cookies in a food processor and pulse until you have fine crumbs, about 1–2 minutes on high.
  • Add the dairy-free cream cheese and peppermint extract, then process until the mixture forms a cohesive ball, about 1 minute.
  • Scoop tablespoon-sized portions and roll into balls. Arrange on a parchment-lined tray and freeze until solid, about 10 minutes.
  • While the truffles freeze, melt the white chocolate. To avoid burning, melt gently over low heat on the stove and stir frequently for 3–4 minutes. Microwaving can easily scorch dairy-free chips.
  • Dip the frozen truffles by inserting a toothpick into each one and lowering it into the melted chocolate. Use a lined mug with a zip-top bag as a dipping cup for easy handling and cleanup.
  • After dipping, remove the toothpick, then quickly cover the hole with a small dab of melted chocolate. Pipe decorative lines from leftover chocolate and immediately sprinkle crushed candy canes before the coating sets.
