Ingredients
- penne pasta
- black olives, sliced or halved
- sugar plum tomatoes or cherry tomatoes, halved
- balsamic vinaigrette dressing enough to lightly coat the pasta
- crumbled feta cheese with herbs
- salt and pepper, to taste
- fresh parsley for garnish
Instructions

Cook the penne pasta according to package directions until al dente. Drain well.

While the pasta cooks, prepare the other ingredients: halve the tomatoes and slice or chop the olives. In a large bowl, combine the drained pasta, tomatoes, olives, crumbled feta, and enough balsamic vinaigrette to coat everything evenly. Season with salt and pepper to taste and toss gently.

Serve immediately, garnished with chopped fresh parsley. This dish is great warm or at room temperature and pairs well with a simple green salad.
