Instructions

In a large bowl, combine the cooked quinoa, steamed and chopped broccoli, crumbled feta, chia seeds, minced garlic, and chopped parsley. Season with salt and pepper, then fold in the beaten egg to bind the mixture.

Shape the mixture by hand into 4–6 patties. Heat the oil in a large skillet over medium heat and fry the patties for about 5 minutes per side, or until golden and crisp.

Serve the patties on a bed of arugula and cherry tomatoes, or with your preferred side.
