If you want an easy, crowd-pleasing side dish, roast a mix of golden beets, leeks, sweet potato and fennel. Roasting concentrates the vegetables’ natural sugars and gives them a deeply caramelized, slightly sweet flavor. The combination of golden beets and whole roasted garlic creates a wonderful earthy-sweet profile that pairs beautifully with herb-forward seasonings.

The golden beets in this dish are the star. They roast to a tender, slightly sweet finish and easily absorb the aroma of fresh herbs like thyme, rosemary and sage. The fennel adds a subtle anise-like note, while leeks bring a mild, sweet onion flavor that complements the root vegetables.

I like to serve these roasted root vegetables as a simple side or to stuff a holiday roast for added texture and flavor. Leftovers also transform nicely into soup or a hearty filling when combined with broth and a few cashews for creaminess.

Ingredients

2–3 teaspoons oil (olive oil or neutral oil)

1–2 golden beets, peeled and cubed (regular beets also work)

1 1/2 cups chopped fennel

1 1/2 cups chopped leek (or substitute onion or spring onions)

1 medium sweet potato, peeled and cubed (or use regular potato)

5 whole garlic cloves (optional, roast whole alongside vegetables)

1/2–3/4 teaspoon salt (adjust to taste)

1/4 teaspoon freshly ground black pepper

2 tablespoons fresh herbs (thyme, rosemary, sage) or up to 2 teaspoons dried mixed herbs

Tips & Substitutions

Use these roasted vegetables as a stuffing for a holiday roast or serve as a side dish.

Preheat the oven to 400–425°F (205–220°C). High heat helps caramelize the vegetables while keeping them tender.

Roast on a large sheet pan or shallow casserole in a single layer so the vegetables roast instead of steam.

Try adding celeriac, carrots, parsnips or turnips for additional root-vegetable variety.

To make a stuffing, add toasted bread cubes and a splash of vegetable broth once the vegetables are al dente, then bake for another 15–20 minutes until the bread absorbs the flavors and the top is slightly crisp.

How to make Roasted Golden Beets, Fennel and Leeks

Preheat your oven to 400°F (205°C). Lightly brush or coat the bottom of a baking dish or sheet pan with oil.

Add the cubed golden beets, chopped fennel, chopped leeks and sweet potato to the baking dish. Add whole garlic cloves if using.

Drizzle the remaining oil over the vegetables. Sprinkle with salt, pepper and herbs, then gently toss to coat evenly.

Cover the baking dish with parchment or foil for the first 15 minutes to speed cooking and help the vegetables become tender.

After 15 minutes, remove the parchment or foil, stir or turn the vegetables so they brown evenly, then continue roasting uncovered for another 20–30 minutes, or until the vegetables reach your desired tenderness and are nicely caramelized.

If turning this into stuffing, when the vegetables are al dente add toasted bread cubes and a splash of vegetable broth, then bake for an additional 15–20 minutes until the bread soaks up the juices and the top is slightly crisp.

Notes

You can add toasted bread to make a heartier stuffing and moisten with vegetable broth. For variety, include parsnips, carrots or celeriac. Leftover roasted vegetables can be blended with broth and a handful of cashews to create a creamy, flavorful soup—simmer to thicken as needed.

Even if your outdoor space is limited to a walkway, weeds are probably part of the picture. They’re resilient, resourceful, and adaptive—qualities we might admire in other contexts, but not when unwanted plants overtake paths, patios, and beds. For practical purposes in this article, a weed is simply a plant you don’t want.

I’ve lived on the same 2½ acres in rural San Diego County for more than 20 years. From the start, we decided to avoid conventional herbicides on our property. Even though avoiding chemical shortcuts takes more time and creativity, we preferred the trade-off: protecting our children, pets, soil, and air from the unintended effects of toxic sprays.

My approach to home and yard care favors long-term thinking over quick fixes. Advertising promises that a single spray or product will erase problems instantly. Sometimes that seems true in the short term, but the consequences can accumulate—persistent respiratory irritation, developing allergies, or skin sensitivities are all possible outcomes of repeated exposure to harsh chemicals. The good news is that you don’t have to choose between a clean, attractive space and good health. There are safe, effective strategies that require a bit more effort but avoid the risks of conventional herbicides.

Why ditch chemical weed killers? The case against glyphosate & 2,4-D

Herbicides like glyphosate and 2,4-D dominate many garden stores because they are convenient and fast-acting. They do what they promise: clear weeds quickly and save time. But convenience carries risks. Authorities disagree on the degree of hazard, and real-world exposure is rarely limited to the person spraying. Drift on the breeze, transfer to children or pets who run and roll on treated lawns, accidental spills, and misuse are real possibilities. Given those exposure pathways, many people prefer to avoid these products when alternatives exist.

Other common herbicides, such as dicamba, also pose problems—especially drift that can harm neighboring plants and ecosystems. Choosing alternatives comes down to weighing short-term speed against longer-term health and environmental considerations.

The best method for controlling weeds depends on what the weeds are, where they are, and how large they are.

Safe alternatives for home gardeners

Avoiding commercial herbicides doesn’t mean accepting a permanent weed problem. There are many effective, non-toxic methods. The right choice depends on the weed species, the site, and the size of the infestation. Below are practical options I’ve used and tested over years of gardening.

Non-toxic weed control methods that actually work

Why I use boiling water to kill weeds in my patio

For weeds emerging through cracks in paved areas, boiling water is my go-to. It’s simple, free of chemicals, and effective on plants under about 8 inches tall. Boil water in a kettle or use surplus water from cooking, then carefully pour it over the weeds. The plants wilt within a day and usually dry out and die over the next couple of days. In my experience, this desiccates many weeds so they don’t immediately rebound.

Important caveats: boiling water will kill any plant it contacts and can harm beneficial soil creatures, so use it only on hardscaping, not in beds or lawns. It’s also impractical for large fields of tall weeds.

Why I don’t recommend many popular DIY recipes

I’ve tested many homemade remedies and found several common problems: they damage desirable plants and surfaces, they alter soil chemistry, or they require protective gear similar to commercial herbicides. Below are quick notes on common DIY approaches.

Vinegar

Household vinegar (4–5% acidity) may take multiple applications and is less effective on established weeds. Horticultural vinegar (much stronger) will kill plants but can also corrode stone and cement, harm soil life, and require protective gear. It’s best used only on hard surfaces you want to keep plant-free.

Baking soda

Applied to foliage, baking soda can dry some plants, but its salts can change soil chemistry and inhibit future plantings. Use cautiously and avoid applying where you plan to grow desirable plants.

Hydrogen peroxide

Hydrogen peroxide will kill plants and can bleach or etch stone surfaces. Like other aggressive treatments, it belongs only on areas without desirable plants and where surface damage is not a concern.

The vinegar, salt, and dish soap mix

This widely circulated recipe can leave salt residues that damage soil and make future planting difficult. It can also leave unsightly residues on hard surfaces and rarely proves reliably effective on established weeds.

Castile soap plus vinegar

Combining true soap with vinegar causes a chemical reaction that reduces the effectiveness of both, often leaving an oily residue. It’s not a dependable weed-control method.

Stopping weeds before they start: prevention strategies

Prevention is the most efficient form of weed control. Investing a little effort up front dramatically reduces the work later. Techniques that work well include dense planting, ground covers, targeted watering, and mulching.

Plant thickly

Planting desirable species close together deprives weeds of light and space. When desirable plants form a continuous canopy, weed seedlings struggle to establish.

Use ground cover

Ground covers crowd out weeds and protect soil from erosion and nutrient loss. Choose species suited to your climate and soil—legumes are especially helpful for building nitrogen. Consult local growers for the best options in your area.

Water wisely

Targeted irrigation like drip lines and soaker hoses delivers water to desired plants and reduces the moist bare soil where weeds thrive. Avoid wide-area sprinklers that encourage weed growth between plantings.

Mulching

A generous layer of organic mulch suppresses weeds, conserves moisture, and adds fertility as it decomposes. Aim for 3–4 inches of organic material and replenish as it breaks down. I favor organic mulches that form a dense mat and improve soil over time.

Landscape fabric

When used under mulch or gravel, landscape fabric can slow weed growth by blocking direct shoots from the soil. It’s not a perfect barrier—weed seedlings can sprout in the mulch above it—but those weeds tend to have shallow roots and pull out easily. Used thoughtfully, fabric under several inches of organic mulch is a useful component of a weed-management plan.

The most targeted weed control of all: physical removal

Nothing beats hands-on removal for precision and safety. Hand pulling, hoes, and targeted tools remove plants without chemicals. These methods take time, but they’re effective and protect surrounding plants and soil life.

Hand pulling

Hand pulling checks every box for safe, low-cost weed control. The key is to remove the entire root so the plant won’t regrow. It’s easiest after rain when soil is loose. Use a trowel or cultivator to loosen the soil around the root, pull small weeds before they enlarge, and practice regular vigilance to keep work manageable.

Hoes: work faster

A sharp hoe is one of the most efficient tools for clearing weeds from compacted soil. The hula or stirrup hoe is ideal for shallow weeding and is excellent for larger areas where you want to chop off seedlings at the surface. Use good posture and a sharp blade for best results.

Rototilling — pros and cons

Rototilling quickly chops and buries weeds, but it can bring weed seeds to the surface and disrupt soil structure and microbiology. It can be useful for incorporating cover crops or preparing a new bed, but shallow tilling is preferable to preserve soil health.

Other natural weed control methods

Sheet mulching (lasagna gardening)

Sheet mulching layers organic materials to smother weeds and build soil. Typical steps: cut plants low, add soil amendments, cover with cardboard or thick newspaper, wet the layer, add alternating layers of moist nitrogen-rich compost and dry carbon-rich materials until 12–18 inches thick, then wet thoroughly. Allow several months for decomposition before planting; this both suppresses weeds and improves soil.

Tarping and solarizing

Covering an area with a tarp, cardboard, or thick newspapers and weighing down the edges will kill weeds in a couple of weeks by combining heat and darkness. This method is faster than sheet mulching but does not improve soil structure. Don’t leave tarps on longer than needed to avoid harming soil life or breaking down synthetic materials.

Flame weeding

Flame weeders kill weeds by brief exposure to high heat. They’re chemical-free and targeted but carry fire risk and should only be used where safe and legal. Learn proper techniques before trying this method.

Mowing for weed control

Mowing unmanaged fields or large grassy areas regularly prevents seed set, reduces fire fuel, and retains nutrients when clippings are left in place. Monthly mowing can keep a field tidy and reduce troublesome seed-bearing plants without intensive inputs.

Unexpected natural weed control methods

Using chickens and goats

Livestock like goats and birds like chickens will eagerly eat many weeds. Renting a herd of goats for targeted weed removal is increasingly common. They are indiscriminate eaters, and their droppings add fertility, so this can be an effective option in appropriate settings.

This is one of my neighbors’ goats, which keep their yard shorn and lush. Photo by Josh McMurtrie

Edible weeds

Many plants labeled as weeds are edible and nutritious—dandelion greens, purslane, and sorrel are common examples. If you’re confident wild greens haven’t been sprayed, they can become part of your salad or cooked greens. Learning to identify edible weeds can turn a nuisance into a resource.

Beneficial weeds

Some so-called weeds offer benefits: clover fixes nitrogen, retains moisture, and attracts pollinators. Recognizing which plants provide ecosystem services can help you tolerate or even encourage certain species in parts of your landscape.

Natural weed killer FAQs

Is homemade weed killer safe for pets?

Safety depends on the method. Boiling water is harmless once cooled but keep pets away during application. Many homemade mixes (salt, soap, baking soda) can cause distress if ingested and may harm soil and plants, so use them cautiously.

How do you stop weeds from growing?

The best prevention methods are dense plantings, ground covers, thick mulch, landscape fabric beneath mulch, and targeted irrigation. These strategies reduce the available space and resources that weeds need to thrive.

What is sheet mulching?

Sheet mulching layers organic materials and cardboard or newspaper to smother weeds and build soil. It requires patience—several months—but yields weed suppression and improved soil structure.

Can I use homemade weed killer in a vegetable garden?

It’s generally better to use mulch, hand-pulling, and hoeing in vegetable beds. Many homemade chemical approaches can harm crops and soil life.

Does boiling water kill weeds permanently?

Boiling water can kill small, tender weeds completely, but large plants with deep roots often require additional removal of the root system or different methods.

How do you stop weeds from growing through mulch?

Apply mulch generously—3 to 4 inches—to effectively block weed emergence. Thin layers allow light and seedlings to “laugh at” the mulch and push through.

Putting it all together

Weeds can be controlled without toxic herbicides, but success requires a toolkit of approaches: prevention with dense plantings and mulch, targeted watering, mechanical removal with tools and hands, and thoughtful use of barrier methods like landscape fabric or sheet mulching. There’s no single magic spray that solves everything, but combining these methods reduces effort over time and yields a healthier outdoor space for you, your family, and the environment.

Ingredients

6 cups sliced zucchini (about 4–5 small zucchini)

1 cup chopped onion (white, yellow, or sweet)

1 cup shredded carrots (or matchstick carrots)

1 cup sour cream

10.5 oz can cream of chicken soup (or substitute cream of mushroom, celery, or onion)

6 oz box chicken-flavored stuffing mix

1/2 cup butter, softened or melted

How to make this zucchini casserole

Preheat the oven to 350°F (175°C). Slice the zucchini and coarsely chop the onion. Shred the carrots if needed.

In a medium mixing bowl, combine the sour cream, cream of chicken soup and shredded carrots. Stir until smooth.

Bring a pot of salted water to a boil. Add the sliced zucchini and chopped onion and blanch for 3–5 minutes until just tender. Drain thoroughly to remove excess water.

Fold the drained zucchini and onions into the sour cream mixture. In a separate bowl, stir the stuffing mix with the softened or melted butter until evenly coated.

Grease a 9×13-inch casserole dish. Spread half of the stuffing mixture in the bottom of the dish. Spoon the creamy vegetable mixture over the stuffing, spreading gently to avoid displacing the base. Sprinkle the remaining stuffing mix evenly over the top.

Bake for 25–30 minutes at 350°F, until the topping is golden brown and the casserole is heated through. Let rest a few minutes before serving.

Tips & tricks

Add 1 pound of cooked, chopped chicken to the sour cream mixture to turn this into a satisfying main dish.

Thin slices of zucchini blend better into the creamy filling and ensure even texture.

Pre-shredded carrots save prep time and maintain consistent texture.

Choose small, young zucchini for tender flesh and smaller seeds.

Double the vegetables and keep the cream and stuffing amounts the same to make a lighter, more vegetable-forward casserole.

Simple enough for a weeknight dinner yet refined enough for guests or special occasions.

Why This Recipe Works

This salmon piccata is full of clean, bold flavor and comes together in under 30 minutes. Searing the fish creates a crisp, golden exterior that contrasts beautifully with the silky lemon-butter sauce. Everything cooks in a single skillet for fast prep and minimal cleanup.

Salmon is an excellent source of protein and healthy omega-3 fats. This recipe is a delicious way to enjoy a nutrient-dense meal without a lot of fuss.

Versatile with side dishes. Serve the piccata with rice, pasta, roasted vegetables, or creamy mashed potatoes for a comforting plate. Green vegetables like asparagus or broccoli are classic partners and help balance the richness of the sauce.

Chef’s Tips

For deeper flavor, swap chicken broth and lemon juice for dry white wine. A dry sauvignon blanc or pinot grigio adds acidity and complexity that complements the butter and capers.

Reheating leftovers: Store cooked salmon in an airtight container with sauce for up to 3 days in the refrigerator. Reheat gently on the stove over low heat until warmed through, or bake at 275° F for a gentle reheat that preserves texture. Aim for an internal temperature around 125–130° F when fully warmed.

Fresh is best, but frozen works. Thaw completely, then pat the fillets dry before seasoning and cooking to ensure a good sear.

Instructions

Place the salmon fillets on a cutting board. Pat each fillet completely dry on all sides with paper towels. Season the fish evenly with salt and freshly cracked black pepper. Set aside while you heat the pan.

Warm a large skillet over medium-high heat. When the pan is hot, add 2 tablespoons of butter and swirl until it melts and coats the surface. Do not let the butter brown.

Gently place the seasoned fillets in the skillet, skin-side down if applicable. Sear for about 3 minutes, until the underside is golden and releases easily from the pan. Flip and sear the other side for another 3 minutes until nicely browned and cooked through to your preference.

Transfer the seared salmon to a large plate and cover loosely to keep warm. Return the skillet to medium heat and add the remaining 2 tablespoons of butter.

In a small bowl, whisk together the lemon juice, chicken broth, and cornstarch until smooth. Pour this mixture into the skillet with the melted butter, stirring to combine and lift any brown bits from the pan.

Bring the sauce to a gentle simmer, stirring occasionally, and cook 3 to 5 minutes until the sauce thickens and becomes glossy.

Remove the pan from the heat. Stir in the drained capers and chopped parsley, then return the salmon to the skillet. Spoon the sauce over the fillets and flip them a couple of times so they are well coated.

Place the fillets on serving plates, spoon additional sauce over the top, and garnish with thin lemon slices and extra parsley if desired. Serve right away with your preferred sides.

Notes

Salmon: If buying one large fillet, choose a 2–3 pound piece and cut it into four equal portions before cooking.

Wine swap: Replace the chicken broth and lemon juice with about ¾ cup dry white wine if you prefer; it adds depth and a pleasant acidity to the sauce.

Starch options: Cornstarch can be swapped for arrowroot starch if you need a gluten-free or alternative thickener.

Dairy-free option: Use a plant-based butter to make this dish dairy free while preserving a buttery mouthfeel.

Storing leftovers: Keep any leftover salmon piccata in an airtight container with plenty of sauce to maintain moisture. Properly stored, it will keep in the refrigerator for up to 3 days.

Teaching children to cook isn’t just about collecting recipes. To truly empower young cooks, build foundational skills the way you teach reading: one step at a time.

I drove past an elementary school recently and noticed huge packed snowballs sitting scattered across the playground. It made me smile—my own front yard also holds two enormous spheres of snow, the proud work of my six-year-old.

He set out to build a snowman and ended up making two massive snowballs that were too heavy for him to lift or bring together. We never managed to help him finish, so they remain two lonely halves of a snowman.

Meanwhile, on other lawns I saw perfected snowmen with scarves, hats, and cheerful faces. The difference between the unfinished snowballs and the completed snowmen made me reflect: to a child, what truly separates a finished project from an unfinished one?

The answer is simple: effort, joy, and ownership. My son had done so much of the work that he still calls it “my snowman,” even though it’s incomplete. He felt ownership and delight in the process. That’s the same feeling I want my children to have in the kitchen.

Kids don’t need to master entire meals at once. They only need one or two practical skills to be meaningfully involved. Learning a single task—spreading, measuring, chopping—gives them confidence and a real sense of contribution. That sense of ownership brings many unexpected benefits.

But Isn’t Teaching Kids to Cook All about Finding the Right Recipe?

Search engines will return dozens of lists titled “best kid-friendly recipes” or “recipes to teach kids.” While recipes are useful, focusing solely on them limits children’s abilities. Cooking is far more than following instructions; it’s creativity, problem solving, and adaptability.

Relying on recipes alone can leave families feeling constrained—what happens when the fridge contains random ingredients that don’t match a specific recipe? Teaching skills instead of rote recipes enables children to transform ingredients into meals without constantly searching for the “perfect” instruction sheet.

That’s why teaching a child to cook is better framed as building a toolbox of core skills rather than memorizing a short list of recipes. When a child learns techniques, those skills apply across countless dishes and situations.

How We Teach Kids to Cook

In our Kids Cook Real Food™ eCourse, the emphasis has always been skills first. The goal is to equip children with a wide range of practical abilities so they can confidently participate in family meals and prepare food that suits their tastes and needs.

Teaching five or ten fixed recipes gives children only a short-lived sense of capability. By contrast, teaching foundational skills—spreading, measuring, safely using knives, rolling dough, sautéing—turns kids into reliable kitchen helpers who can contribute to many different meals.

1. Skills let kids participate immediately

We consistently hear from parents that their children become capable helpers after just one class. A two-year-old who learns to spread with a butter knife can help make toast, bagels, and snacks. A five-year-old who learns to measure accurately can assist with countless recipes, from seasoning meat to making cookies.

Older children who learn safe knife skills quickly become sous-chefs, saving families time and increasing independence. Knife practice and other skills are not gimmicks; they unlock real, everyday participation.

2. Skills open a world of creativity

Just as reading opens a universe of books and ideas, practical cooking skills open the produce aisle and a world of recipes. When children know techniques, they can improvise, adapt, and create without being limited to one recipe. This fosters creativity and independent problem solving—qualities children need in and out of the kitchen.

I want young cooks to walk into any kitchen and think, “I can handle this.” Whether they use one skill at a time or combine many, the confidence to nourish themselves and others is a lifelong advantage.

3. Skills support children with food allergies and special diets

Many families face dietary restrictions. Teaching versatile skills helps children with allergies or special diets prepare safe, affordable meals without relying on processed products or unsuitable class recipes. Skill-based learning allows substitutions and adaptations so every child can participate and gain confidence.

In our instruction, we aim to minimize common allergens in examples and emphasize that any family-safe recipe can be used to practice fundamental techniques like rolling dough or sautéing vegetables.

All Kids Can Learn One Skill at a Time

Breaking down cooking into small, teachable parts makes the kitchen accessible to nearly every child—toddlers, children with allergies, and kids with physical or developmental differences. Learning a single skill builds joy, investment, and a growing appetite for more participation.

Just as I enjoyed imagining the laughter of kids packed around those giant snowballs, I love hearing children proclaim small kitchen victories: “Look, I cut that banana!” or “Taste this—I measured all the seasonings!” These moments are the real measure of success.

Once children have a few skills, they’re ready to explore recipes—but recipes should never be the ceiling of their potential. Children can and should eat the same food as adults; there’s no need to lower expectations with separate “kids’ meals.”

Thank you for supporting the idea that kids belong in the kitchen. Teaching skills one step at a time helps them grow into confident, creative cooks who can feed themselves and others for life.

Someone asked about coconut whipped cream on the Food Doodles Facebook page a while back, and I’ve been wanting to build a recipe around it ever since. These no‑bake banana coconut cream mini pies are the result: simple, naturally flavored, and perfect for sharing.

Coconut whipped cream has a mild, natural sweetness and a distinct coconut flavor. I enjoy it most when it complements other textures and tastes—like a firm date‑coconut crust, ripe banana slices, and a hint of dark chocolate on top. Unlike dairy whipped cream, coconut cream won’t turn into butter no matter how much you whip it. It also won’t become quite as firm as traditional whipped cream, which can be an advantage in a dessert that relies on soft, silky layers.

The pie is best served straight from the tin, though you can line the pie plate with plastic wrap or parchment to make removal easier. Keep in mind these mini pies are fairly soft at room temperature; they hold their shape best after a short chill in the freezer. For cleaner slices, freeze the pies for about an hour so the top of the cream firms up just enough to cut neatly without becoming rock‑hard.

I like to finish these with a light grating of dark chocolate for contrast, but that’s entirely optional. If you choose to slice and serve, the plastic wrap or parchment really helps when lifting the pieces out of the tin. If you prefer to serve directly from the pie plate, these are lovely straight from the freezer after the short firming period.

The first slice is often a little messy, but when the flavors come together—sweet banana, creamy coconut, chewy date‑coconut crust—it’s well worth it. These pies make a great dessert for two to four people to share, or a nice treat to serve at a small gathering.

Banana Coconut Cream Mini Pies

Makes 2 four‑inch pies; serves 4–8

Crust:

2/3 cup Medjool dates

2/3 cup unsweetened shredded coconut (plus 2 tbsp extra if needed)

1/2 tsp vanilla extract

1/4 cup ground flaxseed

pinch sea salt

Filling:

1 can full‑fat coconut milk, refrigerated

1/4 cup powdered sugar

1 tsp vanilla extract

2 large bananas

Dark chocolate, for grating on top (optional)

To make the crust, pulse the dates and shredded coconut in a food processor until the dates are broken down and the mixture forms a sticky “dough.” Add the vanilla, flaxseed, and a pinch of sea salt, and process until everything is well combined. If the mixture feels extremely sticky, stir in up to 2 tablespoons more shredded coconut to reach a workable consistency.

Divide the crust mixture evenly between two 4‑inch pie plates. If you plan to remove the pies from the tins for serving, line each tin with plastic wrap or parchment for easy removal. Press the crust mixture firmly and evenly into the bottoms and up the sides of the tins. Place the crusts in the freezer while you prepare the filling.

Open the chilled can of coconut milk and scoop off the solidified coconut cream that has risen to the top; reserve the remaining coconut water for another use. In a cold bowl with chilled beaters, whip the coconut cream until light and airy, similar to a soft whipped cream. Add the powdered sugar (use an organic brand if you need it to be vegan) and the vanilla, then beat briefly to combine.

Remove the crusts from the freezer and slice the bananas into thin rounds, about 1/4–1/2 inch thick. Arrange a single layer of banana slices in the bottom of each crust. Spoon or pipe the whipped coconut cream onto the bananas, filling the crusts, then top with more banana slices. Store the pies in the refrigerator until ready to serve.

For neater slices, place the pies in the freezer for about one hour before cutting; much longer will make them too hard, and cutting sooner risks a messy result. Grate dark chocolate over the top just before serving if desired. Serve directly from the tins or lift out using the plastic wrap or parchment to transfer slices to plates. Enjoy!

The best banana bread donuts

These baked banana bread donuts are moist, tender, and full of banana flavor — essentially your favorite banana bread in donut form. They’re simple to make, adaptable to different dietary preferences, and easy to customize with mix-ins like chopped nuts, shredded coconut, or mini chocolate chips.

Bake them fresh and serve warm to family or guests; they disappear fast. The recipe makes six large donuts, and you can easily double or triple the batch if you’re baking for a crowd.

Banana donut frosting ideas

These soft baked donuts are delicious plain, but they also take a variety of toppings well. For a simple finish, toss warm donuts in cinnamon sugar made from two tablespoons ground cinnamon mixed into half a cup of sugar or a granulated sugar-free substitute.

For a protein-rich breakfast, spread peanut butter or almond butter over each donut. A two-ingredient glaze is another fast option: whisk one cup powdered sugar with two tablespoons milk (or water) and an optional tablespoon melted butter until smooth; add liquid to thin if needed.

Other tasty toppings include browned butter icing, vanilla or chocolate frosting, brown sugar buttercream, or melted coconut butter. In the photos here, a cinnamon cream cheese frosting was used; a recipe for that frosting is included below.

Cinnamon cream cheese icing

To make a creamy cinnamon frosting, bring 8 ounces of cream cheese and 4 ounces of butter to room temperature. You can substitute plant-based cream cheese and butter for a dairy-free version.

Beat together the cream cheese and butter, then add two cups powdered sugar (or an alternative powdered sweetener), an optional teaspoon of vanilla extract, and two teaspoons ground cinnamon for a warm spice note. If the frosting is too thick, add milk or water a teaspoon at a time until it reaches the desired consistency.

Because it contains perishable ingredients, store frosted donuts and any leftover frosting in the refrigerator.

Ingredients for the recipe

Basic ingredients are mashed banana, flour, baking powder, salt, a sweetener, and a little oil or water. Optional additions include a 1/2 teaspoon cinnamon, 1/2 teaspoon vanilla extract, chopped walnuts, or mini chocolate chips.

This recipe works well with all-purpose white flour, whole grain spelt flour, oat flour, or a loosely packed gluten-free all-purpose blend. Coconut and almond flours are not suitable here because they require different ratios and more binding ingredients.

For sweeteners, pure maple syrup, agave, or honey work well. If you prefer granulated sugar or a granulated sugar-free substitute, increase the amount to 1/4 cup and add about 3 tablespoons of milk to account for the lost liquid.

Vegan banana bread donuts

These donuts are easily vegan: use pure maple syrup or agave instead of honey, choose plant-based butter and cream cheese for the frosting, and use coconut oil or vegetable oil for the fat. The recipe is naturally egg-free, with mashed banana providing moisture and binding.

If you prefer no oil, replace the oil with an equal amount of water or additional mashed banana; note that fat-free versions will be slightly denser. Swapping in nut butter for the oil is another option that adds protein and healthy fats.

Recipe video

A step-by-step video accompanies this recipe for those who like to follow visual instructions. Watch the video for tips on batter consistency and doneness if you prefer a guided demonstration.

How to make healthy banana bread donuts

1. Preheat the oven to 350°F (175°C) and grease a donut pan well so the donuts release easily after baking.

2. In a large bowl, whisk together mashed banana, sweetener, and oil or water. Add vanilla if using.

3. Stir in the dry ingredients — flour, baking powder, and salt — until just combined. Fold in any optional mix-ins such as nuts or chocolate chips.

4. Spoon the batter into the prepared donut pan, smoothing the tops. Bake on the center rack for about eight minutes, or until the donuts have risen and are golden. A toothpick inserted into the center should come out mostly clean.

5. Let the pan cool slightly, then run a knife around each donut and pop them out onto a rack to cool. Once cool, frost or glaze as desired, or toss warm donuts in cinnamon sugar.

This basic method yields six large donuts. If you want more, double the recipe and bake in additional pans.

Baked banana donuts without a donut pan

If you don’t have a donut pan, use a mini muffin tin to make donut-hole style bites; the baking time is similar. Alternatively, bake the batter in a muffin tin for small muffins, or try other small-batch baking devices designed for bite-sized treats.

Gram measurements

For accurate baking with a scale, use these metric equivalents: 160 g mashed banana (after peeling), 45 g pure maple syrup or honey, 30 g oil or water, 3 g vanilla (optional), and 120 g flour. Don’t forget to include the salt and baking powder in the dry ingredients.

This donut recipe is adapted from simple, healthy banana bread and muffin recipes. It’s a quick, crowd-pleasing way to turn ripe bananas into a hand-held treat that works for breakfast, brunch, or snacks.

Ingredients

2/3 cup mashed banana (about 160 g)

3 tbsp pure maple syrup or honey (45 g)

2 tbsp oil or water (30 g)

1/2 tsp pure vanilla extract (optional)

1 cup flour (120 g)

1 tsp baking powder

1/4 tsp salt

Instructions

Preheat oven to 350°F (175°C). Grease a donut pan or mini muffin tin.

In a large bowl, whisk together mashed banana, maple syrup (or honey), and oil (or water). Stir in vanilla if using.

Add flour, baking powder, and salt. Stir until just combined; do not overmix. Fold in optional add-ins if desired.

Portion the batter into the prepared pan and smooth the tops. Bake for about eight minutes, or until the donuts have risen and a toothpick comes out mostly clean.

Allow to cool slightly in the pan, then remove to a rack. Frost, glaze, or dip in cinnamon sugar once cooled.

Notes

These donuts are versatile and forgiving. Try different flours and sweeteners, and experiment with toppings to suit dietary needs and flavor preferences. Store frosted donuts refrigerated due to the cream cheese frosting; unfrosted donuts keep well at room temperature for a day or two in an airtight container.

This warm Balsamic Strawberry Sauce is an elegant, versatile topping that brightens simple desserts and even savory dishes. It’s especially lovely spooned over vanilla ice cream, but it also pairs beautifully with cheesecake, panna cotta, crepes, and grilled pork or chicken if you enjoy a touch of sweetness with your savory plates. A hint of freshly ground black pepper gives the sauce a subtle complexity that makes it feel gourmet.

Balsamic Strawberry Sauce

Serve this sauce warm for the best aroma and texture, though it can be chilled and used cold if preferred. The balsamic vinegar brings depth and a gentle acidity that balances the sweetness of the strawberries and sugar, while the black pepper adds a surprising, pleasant note.

🛒 Ingredient Notes:

Granulated white sugar – provides sweetness and forms the base syrup.

Water – used to dissolve the sugar and create a light syrup texture.

Sliced strawberries – fresh are preferred for the brightest flavor, but frozen strawberries will work in a pinch.

Balsamic vinegar – a good-quality balsamic adds acidity and complexity; any standard balsamic will do.

Freshly ground black pepper – just a small amount to enhance and balance the flavors.

✏️ How to make Balsamic Strawberry Sauce

Below is a clear, easy method to prepare this sauce. Follow the steps and adjust pepper to taste for a subtle savory edge.

Combine the sugar and water in a medium saucepan. Heat over medium, stirring frequently, until the sugar is completely dissolved and the mixture is clear.

Add the sliced strawberries, balsamic vinegar, and 1/4 teaspoon of freshly ground black pepper. Stir to combine.

Continue to cook over medium heat for about 10 minutes, stirring occasionally, until the strawberries have softened and the liquid thickens into a syrupy consistency. Remove from heat.

For serving, spoon the warm sauce over scoops of vanilla ice cream or use it to top cheesecake, panna cotta, or crepes. Garnish with a few reserved strawberry slices and a light sprinkle of fresh black pepper if desired.

➡️ Tips and Substitutions:

Fresh, ripe strawberries produce the best flavor and color. If using frozen strawberries, thaw and drain any excess liquid before adding.

Add minced fresh basil or mint near the end of cooking for a bright herbal note that complements the strawberries.

If you like a smoother sauce, lightly mash the cooked strawberries with a fork or blend briefly with an immersion blender, then return to heat to adjust thickness.

Adjust the amount of balsamic to taste — start with 1/4 cup and add a teaspoon at a time if you prefer more tang.

✔️ Make Ahead Tips

Store the sauce in an airtight container in the refrigerator for up to one week. Reheat gently on the stovetop or in the microwave until warm before serving.

To freeze, place the cooled sauce in a freezer-safe container or bag, leaving space for expansion. Freeze for up to three months. Thaw overnight in the refrigerator and stir well before reheating to recombine any separated liquids.

❤️ What I Love About This Recipe

It’s versatile — equally suited to sweet and savory applications, giving you more ways to use seasonal strawberries.

The combination of balsamic and pepper transforms ordinary strawberry sauce into something with a gourmet twist.

It’s a simple way to elevate store-bought or homemade ice cream, turning a basic dessert into a memorable treat.

This recipe transforms classic fried chicken wings with an Asian-inspired twist. It uses simple, pantry-friendly Asian ingredients to build deep umami flavor, then creates an extra-crispy finish by coating the wings in a blend of cornstarch and tapioca flour. The result is golden, crunchy skin and juicy meat—perfect for appetizers, game day, or a shareable weeknight dinner.

Start by marinating the wings in a well-balanced mix of wet ingredients to infuse savory and slightly sweet flavors:

soy sauce (salty, rich umami)

dark soy sauce (richer color and a touch of sweetness)

oyster sauce (salty and sweet with caramel notes)

After the wet marinade, the wings are coated in a 50/50 mix of tapioca flour and cornstarch. Tapioca gives a delicate, slightly chewy crust while cornstarch contributes excellent crispness. If you don’t have tapioca, you can substitute with more cornstarch or a light rice flour, but keeping half cornstarch helps ensure the crispiest skin.

COOKING TIPS for Crispy Chicken Wings:

Use a reliable meat thermometer. This is one of the best investments for consistent results. Heat the oil to around 350°F (175°C) for frying. The wings are safely cooked when the internal temperature reaches 165°F (74°C).

Pat the wings dry before marinating and before coating. Removing excess surface moisture helps the marinade cling and prevents the coating from becoming gummy.

Use your hands to massage the wet marinade into the wings so every nook is seasoned. This helps the flavors penetrate the skin and surface of the meat.

Avoid overcrowding the fryer or pot. Frying too many wings at once drops the oil temperature and produces soggy, unevenly cooked pieces. Fry in small batches—about three to four wings at a time, depending on pot size and oil volume.

Drain on a wire rack, not stacked on paper towels. Give each wing space to cool on a wire rack so steam can escape. Stacking wings traps steam and turns crisp skin soft.

Manage vigorous bubbling by briefly removing the pot from heat. If the oil bubbles too violently, take the pot off the burner for 15–30 seconds to let it settle. Controlled bubbling ensures even frying and prevents scorching.

Adjust the seasoning to taste. This recipe is flexible—taste and tweak the marinade. Want it sweeter? Add a pinch of sugar or honey. Prefer more heat? Add extra cayenne or a dash of chili powder. You can also skip the wet marinade and simply coat and fry the wings for a neutral, crunchy base to serve with your favorite sauce.

Recipe

Ingredients

2 lbs chicken wings (about 10 whole pieces)

1 tbsp canola oil for frying (or any neutral, high smoke-point oil)

Wet Marinade

2 tbsp oyster sauce

1 tbsp soy sauce

1 tbsp dark soy sauce

Dry Coating

1/4 cup cornstarch

1/4 cup tapioca flour

3 tbsp garlic powder

1 tsp cayenne powder (optional, adjust for heat preference)

Instructions

Pour about 2 inches of canola oil into a deep, heavy pot or deep fryer and begin heating it. Aim for an oil temperature of approximately 350°F (175°C) before frying.

Pat the chicken wings dry with paper towels. Place them in a bowl and add the oyster sauce, soy sauce, and dark soy sauce. Use your hands to thoroughly coat each wing so the marinade covers the surface evenly.

Combine cornstarch, tapioca flour, garlic powder, and cayenne in a large zip-top bag or a bowl with a lid. Working in small batches, transfer a few marinated wings to the bag or bowl and shake vigorously until each wing is evenly coated. Shake off any excess flour.

Carefully lower coated wings into the hot oil in small batches—about 3 to 4 wings at a time depending on pot size. Fry until golden brown and crisp, about 7 to 12 minutes, turning each piece every couple of minutes for even coloring.

Use a slotted spoon or tongs to remove wings and place them on a wire rack set over a baking sheet. Leave space between pieces to prevent steaming so the crust stays crisp.

Serve the wings hot with your preferred sides or dipping sauces. These pair well with simple sides like steamed rice, pickled vegetables, or a crisp green salad.
