This creamy keto cilantro lime shrimp salad is one of my favorite go-to salads. It’s bright, refreshing, and creamy — a dish that consistently earns compliments whenever I serve it.

When you want a flavorful salad that comes together quickly, this creamy keto cilantro lime shrimp salad delivers. It works well for everyday meals and is elegant enough for holidays or special occasions. The combination of tender shrimp, bright lime, fresh cilantro, crunchy celery, and a smooth, tangy dressing makes it a satisfying option for anyone following a low-carb or keto lifestyle.

About the shrimp
Shrimp are a versatile, low-carb protein that cook quickly and pair perfectly with bold flavors. They are nutrient-dense, supplying iodine, iron, magnesium, B12, and other minerals and vitamins. A small serving adds substantial protein with very few carbs, making shrimp a smart choice for keto meals. You can prepare shrimp several ways — boil, steam, saute, grill, roast, or pan-fry — and serve them hot or chilled. For this salad, brief boiling or poaching followed by quick cooling keeps the shrimp tender and makes them ideal for tossing with the dressing.

Dressing for creamy cilantro lime shrimp salad
I usually prepare the dressing while the water comes to a boil for the shrimp. The dressing combines keto mayonnaise, heavy whipping cream, fresh lime juice, and olive oil for a rich, silky base with a hint of acidity from the lime. Fresh lime juice is preferred for the brightest flavor, though bottled lime juice can be used in a pinch. Chopped cilantro, diced celery, and red onion add crunchy texture and herbaceous brightness. Season simply with garlic powder, salt, and pepper; if you prefer, substitute one or two minced fresh garlic cloves for garlic powder. Taste the dressing and adjust salt and pepper to your preference before adding the shrimp.

Serving suggestions
This shrimp salad is delicious served on its own or spooned over a bed of lettuce or baby spinach for an attractive presentation. It pairs well with grilled or roasted meats like chicken, pork, beef, or fish, and makes a bright accompaniment to burgers, keto sandwiches, or lettuce wraps. Consider serving it as part of a brunch spread or alongside a bowl of warm keto-friendly soup for a satisfying soup-and-salad meal. You can also serve it with low-carb biscuits or keto-style bread alternatives if desired.

Complementary keto soups and sides
This salad complements a variety of creamy, low-carb soups and sides. Think roasted tomato soup, cauliflower and smoked Gouda soup, or broccoli and asparagus soup — all creamy, comforting choices that balance the bright flavors of the salad. For extra texture, add a crisp low-carb cracker or a piece of keto bread on the side.

Helpful hints
• If your shrimp are sold with shells or veins, peel and devein them and remove tails as desired before or after cooking.
• This salad can be served immediately, but chilling it in the refrigerator for 30–60 minutes helps the flavors meld.
• Adjust the amount of cilantro and lime to taste if you prefer a milder or stronger herb and citrus profile.
