How to Make an Easy Blackberry Cobbler

1. In a medium bowl, combine the blackberries, cinnamon, sugar, and cornstarch. Stir to coat and let the mixture rest for about 20 minutes so the sugar and cornstarch draw out some juices.

2. Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking pan with nonstick spray.

3. Pour the blackberry mixture into the prepared pan and spread it into an even layer.

5. Bake for about 48 minutes, or until the rolls are golden brown and the blackberry juices are bubbling. Ovens vary, so start checking around 30 minutes and keep an eye on the center rolls, which can take longest to finish.

6. Let the cobbler cool for about 10 minutes. Microwave the buttercream frosting for 20–30 seconds, or until pourable, then drizzle it over each cinnamon roll so the top of the cobbler is nicely coated.

  • If you prefer fewer cinnamon rolls, use an oval 3-quart casserole and reduce the rolls to 10 to avoid leftovers.
