When I plan meals for the week, breakfast and dinner usually get the most attention. Breakfast tends to be predictable — oats, eggs and toast, or sometimes a banana-egg-oat pancake. Dinner is the meal I schedule and shop for. Lunch often ends up improvised. If there are leftovers I’ll use those, but most days I aim for something fast, satisfying, and easy to customize. Lately my go-to has been quesadillas.

Quesadillas are nothing revolutionary — cheese melted between two tortillas — but they’re an excellent canvas for whatever you have on hand. By adding a few simple ingredients, a plain cheese quesadilla becomes a more complete, flavorful meal. It’s quick to prepare, portable if you need to take lunch to work, and easy to adapt to vegetarian or meat-inclusive preferences.

Salsa Veggie Quesadilla

Serves 1 (easily doubled)

Ingredients

  • 2 whole wheat or flour tortillas
  • 2–3 handfuls shredded mozzarella (roughly 2/3 to 1 cup)
  • 2–3 tablespoons salsa (mango salsa adds a sweet-tangy note)
  • 1/4 cup diced, boiled yam or sweet potato
  • 1/4 cup diced avocado

Directions

  1. Heat a large skillet over medium-high heat. Lay one tortilla in the skillet.
  2. Sprinkle half the cheese over the tortilla, then dot with salsa, yam, and avocado. Add the remaining cheese and top with the second tortilla.
  3. Cook 3–5 minutes until the bottom is golden and the cheese begins to melt. Carefully flip and cook the other side 2–4 minutes until golden and the cheese is fully melted.
  4. Let the quesadilla rest a few minutes, slice, and enjoy.

This recipe is more of a technique than a strict formula. Ingredient quantities are approximate, and the fillings can be swapped freely — roasted vegetables, black beans, chopped cooked chicken, or a sprinkle of fresh herbs all work well. If you prefer a spicier quesadilla, add a few slices of jalapeño or a dash of hot sauce. For a creamier texture, thinly spread a little cream cheese or Greek yogurt on the tortilla before adding the fillings.

One advantage of this meal is how easily it adapts to feeding others without extra work. For example, my child joined me and preferred just the fillings — the avocado and yam — which meant no additional prep or separate plate. Quesadillas are also great for using small amounts of leftovers: a few roasted veggies, some shredded chicken, or a handful of greens can be tucked inside and transformed into a complete lunch.

Beyond the recipe itself, there are a few practical tips that make weeknight or lunchtime quesadillas even better: pre-cook or roast any vegetables you want to include so they warm through quickly; shred your cheese ahead of time for faster assembly; and use a medium-high pan so the outside crisps while the inside reaches the right temperature. If you’re packing the quesadilla to go, allow it to cool slightly, then wrap in foil to keep it warm and prevent sogginess.
