Ingredients

Crust

  • 1 cup all-purpose flour
  • 1/4 cup (1/2 stick) cold butter, cut into pieces
  • 1/4 cup granulated white sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon grated lemon zest
  • 1 pinch salt
  • 1 large egg

Glaze

  • 2 cups fresh blackberries
  • 3/4 cup granulated white sugar, or to taste
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt

Filling

  • 2 cups fresh blackberries (for the tart filling)
  • 2 tablespoons granulated white sugar

Instructions

Crust

  1. Preheat the oven to 400°F (205°C).
  2. In a food processor or with a pastry cutter, combine the flour, cold butter pieces, sugar, baking powder, lemon zest, salt, and egg. Process or mix until the dough comes together and is evenly combined.
  3. Press the dough into the bottom and about 1½ inches up the sides of a 9-inch springform pan with a removable bottom. Try to keep the thickness even so it bakes uniformly.
  4. Chill the crust in the refrigerator for 10 to 15 minutes to help it hold its shape. Then bake for about 10 minutes or until the crust turns a light golden brown. Remove from the oven and let it cool. Once cooled, release the sides of the springform pan.

Glaze

  1. In a medium saucepan, add 2 cups of blackberries (reserve the filling berries separately). Gently crush the berries with the back of a large spoon to release their juices.
  2. Stir in the sugar, cornstarch, and salt until smooth. Place the pan over medium heat, stirring often.
  3. Continue to cook and stir until the mixture thickens and becomes clear and glossy. This should take only a few minutes once it reaches a simmer. Remove from the heat and allow to cool slightly; the glaze will thicken more as it cools.

Filling and Assembly

  1. Arrange the remaining 2 cups of fresh blackberries evenly in the cooled tart shell. Sprinkle the 2 tablespoons of sugar over the berries to enhance their natural sweetness.
  2. Carefully pour the warm (but not piping hot) glaze over the blackberries, coating them evenly so each berry has a glossy finish.
  3. Chill the tart in the refrigerator for at least 1 hour to let the glaze set and the flavors meld.
  4. When ready to serve, slice into wedges. Optionally, serve with sweetened whipped cream or softened vanilla ice cream for an extra indulgent finish.

Notes

Use ripe, firm blackberries for the best texture and flavor. If you prefer a less sweet tart, reduce the sugar slightly in the glaze. The springform pan makes it easy to remove the tart without damaging the edges; if you don’t have one, use a regular tart pan and be careful when transferring.
