Mexican Shredded Beef Salad
Estilo Norteño — Northern Style
Mexican Salpicón de Res is a flavorful regional dish of shredded beef served at room temperature or chilled. This Northern-style version highlights tender brisket paired with crisp salad vegetables. Roasted chiles add mild smokiness, while radishes and romaine provide crunch. Avocado, tomato, onion and cilantro balance the dish, and a chipotle-vinegar dressing ties everything together. I finish mine with crumbled queso ranchero and serve with small homemade flour tortillas, though tostadas are also traditional. The recipe requires some planning, mostly for slow-cooking the beef, but the result is a memorable, festive plate ideal for family meals or gatherings.

What is Mexican SALPICÓN de Res?
Salpicón de Res is a northern Mexican specialty that varies by region and family tradition. In some areas it’s a vegetable-forward salad with potatoes, carrots and green beans; in Chihuahua and Sonora it’s more focused on shredded beef with fresh salad vegetables. This adaptation blends slow-cooked, shreddable brisket with vibrant salad ingredients for a bright, balanced dish. The cool vegetables complement the rich, smoky meat, creating an ideal combination for warm-weather meals or as a starter for larger gatherings.
There are three main steps to prepare this recipe: cook the beef, make the chipotle dressing, and assemble the salad. Don’t be intimidated—most of the time is hands-off while the brisket cooks. Plan ahead so the beef can cool enough to shred, then toss it with the dressing and vegetables for easy final assembly.
How to cook brisket in the slow cooker
I use a 2.5 lb brisket for deep beef flavor; flank steak is a good alternative if preferred. For a roast this size cook on low for 8–10 hours. Place the trimmed brisket in the slow cooker with white onion wedges, a head of garlic (top trimmed), bay leaves, Mexican oregano, kosher salt and coarse ground pepper. Add enough water to cover the meat plus a couple of inches. The meat should become fork-tender. Remove it from the cooking liquid, let it cool slightly, then shred with forks or by hand, trimming away excess fat. Reserve the strained cooking liquid for another use such as Mexican rice or albóndigas soup.




How to make the Chipotle Dressing/Sauce
The chipotle dressing is central to this salad. Use a food processor or high-speed blender for a smooth emulsion. Combine seeded chipotle chiles in adobo (1 can, seeds removed), avocado or extra virgin olive oil, fresh lime juice, white wine or white vinegar, fresh garlic and salt. Add about half of the reserved adobo sauce from the can to deepen the flavor. Optionally stir in agave nectar to balance heat and acidity.
Puree until completely smooth, taste and adjust salt or sweetness. Toss roughly half of the dressing with the shredded brisket, roasted poblanos, sliced onion and cilantro so the meat is well coated. Reserve additional dressing to adjust seasoning when assembling the final salad.

Prepare the vegetables
Prepare crisp, fresh vegetables to complement the dressed beef. Recommended vegetables:
- Romaine lettuce leaves — about half a head, washed and dried (enough to line a large platter)
- Radishes — washed, dried and thinly sliced
- Cilantro leaves — whole or roughly chopped for the salad and garnish
- Tomatoes — ripe, cut into wedges
- Avocado — sliced or cubed
- Roasted Poblanos, Hatch or Anaheim chiles — peeled, seeded and thinly sliced (canned or frozen hatch chiles work well)
- Red onion — thinly sliced
How to Assemble SALPICÓN de Res for serving
To assemble, spread romaine leaves on a large platter. Pile the dressed shredded beef and roasted chiles over the lettuce and distribute evenly. Arrange sliced radishes, avocado, tomato wedges, cilantro and remaining red onion around and on top of the meat. Crumble queso ranchero or queso fresco over the finished salad if desired. Serve with small flour tortillas or crisp tostadas and a simple salsa on the side. This salad works well as a starter or a satisfying main dish.

Ingredients
For brisket or flank steak
- 2.5 lb brisket, trimmed or flank steak
- 2 bay leaves (dry)
- 2 tsp Mexican oregano (dry)
- 2 tsp kosher salt
- 1 tsp coarse ground pepper
- 1 whole white onion, cut into wedges
- 1 head garlic, top trimmed
- Water — enough to cover the brisket
Dressing / Sauce
- 1/2 cup avocado oil (or extra virgin olive oil)
- 1/3 cup fresh lime juice
- 1/3 cup white wine vinegar (or white vinegar)
- 4 cloves fresh garlic
- 2 tsp agave nectar (optional)
- 1 can chipotle chiles in adobo — chiles removed and seeded
- About 1/2 cup of the remaining adobo sauce
For serving
- 1/2 head romaine lettuce, leaves washed and dried
- 1 avocado, peeled and sliced or cubed
- 6 radishes, thinly sliced
- 1 cup cilantro leaves
- 1/2 cup red onion, sliced
- 2 poblano peppers, roasted, peeled, seeded and sliced (or substitute roasted hatch/Anaheim)
- Queso ranchero or queso fresco, crumbled (optional)
- Small flour tortillas or tostadas for serving
Instructions
Cook the brisket or flank steak
- Place the brisket or flank steak in the slow cooker. Add onion wedges, garlic head, bay leaves, Mexican oregano, salt and pepper.
- Add enough water to cover the meat plus 2 additional inches.
- Cook on low for 8–10 hours until the meat is fork-tender.
Prepare the cooked meat
- Remove the meat from the cooking liquid and allow to cool until it can be handled.
- Shred the meat with two forks or your hands, discarding excess fat.
- Place shredded meat in a large bowl and set aside.
Make the chipotle dressing
- Remove chiles from the can and discard seeds. Reserve the adobo sauce.
- Combine seeded chiles, avocado oil, white wine vinegar, fresh lime juice, garlic cloves, half of the reserved adobo sauce and salt in a food processor or blender.
- Puree until completely smooth. Taste and adjust salt. Add agave nectar if you prefer a touch of sweetness.
Assemble the salad
- In the bowl with shredded beef add the roasted poblanos, 1/2 cup sliced red onion and 1/2 cup cilantro leaves. Toss gently with about half of the chipotle dressing so the meat is evenly coated.
- Arrange romaine leaves on a large platter.
- Spread the dressed salpicón (brisket mixture) over the romaine.
- Top with avocado slices, radishes, additional red onion, tomato wedges and cilantro leaves.
- Sprinkle with crumbled queso ranchero or queso fresco and serve with small flour tortillas or tostadas.
Notes
- Use chuck roast or other shreddable cuts if brisket or flank aren’t available.
- If you can’t find poblanos, roasted hatch, Anaheim chiles or even roasted green bell peppers work as substitutes.
- To make the dressing without a blender, finely mince the seeded chipotles and shake the ingredients together in a jar with a tight lid.
- You can cook the beef on the stovetop in a large pot; expect a shorter cook time of around 3 hours depending on cut and size.
