Ingredients
  • 400g can butter beans – drained. Also known as lima beans.
  • 2 tbsp light tahini
  • 1 tbsp olive oil
  • 1 lemon – juice only
  • ½ tsp salt
  • 1 tsp garlic powder
  • 1 tbsp water – ice cold, add more if needed.
Instructions
  1. Add the drained beans, tahini, olive oil and lemon juice to a food processor. Season with salt and garlic powder, then blend on high until mostly smooth.
  2. Stop, scrape down the sides, then add 1–2 tablespoons of ice-cold water. Replace the lid and blend for another minute.
  3. Scrape again. If the dip is too thick, add more cold water a little at a time and blend until glossy and very smooth.
  4. Taste and adjust seasoning with additional salt, lemon or garlic if desired, then re-blend.
  5. Transfer the dip to a serving bowl using a silicone spatula.
  6. Smooth the surface and optionally drizzle a little extra olive oil over the top.
  7. Finish with chopped parsley and poppy seeds if you like. Serve with crudités, bread or crackers.
