No-bake recipes are always welcome, especially when coconut is involved. Add a little chocolate and you’ve got a combination that’s hard to resist.
I keep a variety of chocolate bars in my pantry, but coconut treats are a staple too — even if some people I know claim they don’t like coconut. To me, there’s always room for more coconut recipes.

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions

Combine all ingredients in a food processor. Mixing by hand works, but the bars may crumble. Press the mixture firmly into a small container (a 7×5 pan works well). Refrigerate for an hour before cutting, or freeze for 15 minutes for quicker firming. Store in the fridge or freezer for a few weeks.
