I missed s’mores all summer. Microwave versions are convenient, but they don’t compare to the ritual of toasting a marshmallow over a flame. Since I don’t camp or build bonfires, my oven became the best alternative for getting that toasted marshmallow flavor.

I’ve avoided the broiler for a while—there’s something nerve-wracking about watching the oven char food—but I finally used it for photos and a couple of s’mores afterward. With the balcony door open, oven mitts on, and a timer set, I managed to char marshmallows without incident. That success made me more comfortable using the broiler again.

If you prefer to avoid the broiler entirely, you can bake the marshmallows inside a giant cookie instead, like this Peanut Butter S’mores Chocolate Chip Skillet Cookie. This skillet cookie has true s’mores flavor: graham cracker crumbs folded into the dough, mini marshmallows scattered throughout, and plenty of chocolate chips.

I considered chopping a few Hershey bars into the dough, but ended up using the bars for actual s’mores and ran out—no regrets. I also added peanut butter because peanut butter, chocolate, and toasted marshmallows are a match made in dessert heaven.

I was inspired by a skillet cookie I saw on S’mores Day and adapted a mini skillet cookie recipe to fit an 8-inch cast iron skillet. The dough bakes up gooey in the center with melty chocolate and toasted marshmallows on top—ideal for serving warm.

If you don’t have a cast iron pan, a round cake pan, pie plate, or springform pan will work as long as it’s deep enough to hold the dough without overflowing. Any ovenproof skillet will do as well.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup smooth peanut butter
  • 1/4 cup (2 ounces or 4 tablespoons) unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 350°F. Prepare an 8-inch cast iron skillet (or another ovenproof pan of similar size).
  2. In a medium bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt.
  3. In a large bowl, beat the peanut butter, softened butter, brown sugar, and granulated sugar until creamy, about 2–3 minutes. Add the egg and vanilla, beating to combine. Gradually mix in the flour mixture. Fold in the chocolate chips and mini marshmallows.
  4. Press the dough evenly into the prepared pan. Bake for 20 minutes for a slightly underbaked, gooey center, or 25 minutes for a fully set cookie. Cool 15 minutes, then serve warm or at room temperature.
