It’s simple. Start with the flour. If you use a kitchen scale, weigh 330 grams of all-purpose flour. A scale gives you consistent results, especially for holiday baking.

If you don’t have a scale, measure 2 3/4 cups by fluffing the flour, gently spooning it into the cup, and leveling with a straight edge.

Let it cool slightly (around 120°F) before adding to the dry ingredients. Add the egg and vanilla, then mix until a soft, slightly sticky dough forms.

Using a stand mixer with a dough hook on low (or kneading by hand), knead for about 4 minutes until elastic. Preheat the oven to 200°F if you plan to proof the rolls there briefly to aid rising, especially in cool weather.

Let the dough rest, covered, for 10 minutes. Then roll it on a lightly floured surface to a rectangle approximately 22–24 by 16 inches. To prevent sticking, flour beneath and on top of the dough and place wax paper between the dough and rolling pin.

Position the dough in landscape orientation (long sides at top and bottom). You can make 24 medium rolls or 48 minis.

For 24 rolls: cut 24 strips about 1 inch wide along the 16-inch side. For 48 mini rolls: make one additional longitudinal cut down the middle, then cut as above. The filling and baking remain the same.

Roll each strip tightly and place the rolls in a greased 9×13 baking dish. Cover with aluminum foil. At this stage you can freeze them (well wrapped) or continue to rise and bake.

If baking now, turn the oven OFF and place the covered pan inside to rise for 45–60 minutes, until the rolls mostly fill the dish.

For the Filling:

Instructions
  1. 1. Grease a 9×13 baking dish. In a large bowl or stand mixer bowl, combine the flour, yeast and salt.

  2. 2. In a microwave-safe bowl combine sugar, butter, water and milk. Heat until hot and butter is very soft, about 45 seconds. Cool to about 120°F, then gradually add to the flour mixture. Add the egg and vanilla and mix until a soft sticky dough forms.

  3. 3. If baking now, preheat the oven to 200°F for proofing.

  4. 4. Switch to a dough hook if using a mixer and knead on low for 4 minutes until elastic, or knead by hand 3–4 minutes. Lightly spray plastic wrap, cover the dough with the sprayed side down, and let rest 10 minutes.

  5. 5. Roll dough to roughly 22–24 × 16 inches. Brush with melted butter, sprinkle filling evenly, and cut into 24 strips. Roll each strip tightly and place in the prepared pan.

  6. 6. Cover with foil. At this point you can freeze (wrap tightly) or proceed with rising and baking.

MAKE AHEAD NOTE: Can be frozen un-risen in the pan. Thaw and continue when ready to bake.
  1. 7. To bake now: place the covered pan in the turned-off 200°F oven to rise 45–60 minutes until the rolls mostly fill the pan. Remove foil and heat oven to 375°F.

  2. 8. Bake 15–18 minutes until light golden brown and internal temperature reaches 185–190°F. Cool 10 minutes before frosting.

MAKE AHEAD NOTE: Baked but unfrosted rolls can be frozen. Thaw and frost when ready to serve.
  1. 9. While rolls cool, make frosting: beat cream cheese, butter, powdered sugar, vanilla and 1–2 tablespoons milk until smooth. Spread over warm rolls.

MAKE AHEAD NOTE: Fully iced rolls can be cooled completely and frozen, wrapped tightly. Thaw and serve.
